I’m back online & summer is almost gone, almost. The weather here is still beautiful enough for lake swims, barbecues & general sunshine frolicking. I thought I’d share my favorite summer salad recipe :: my Strawberry Spinach & Spicy Goat’s Cheese salad.
I made this for my parents as an experiment in 2012 and it paid off! They loved it. I made it again at a bbq last week and it was delicious, so I thought I’d share the recipe with you. This salad is super simple to make and super delicious. Only 3 ingredients and spices to taste.
First I cut up the strawberries in about 4 or 6 pieces and put them in a bowl with the spinach. Toss them around a bit and then add your spices: salt, cayenne pepper, chili flakes, oil, and mix it again. These are all to taste so if you want it spicier then make sure to add lots of extra chili flakes.
Second I add 3/4 of the goats cheese and mix. Make sure that you cut the goat’s cheese ahead of time, and be careful mixing as the goat’s cheese can stick together and form clots within your salad. Add the remaining 1/4 of the cheese on the top to decorate, and voila my strawberry spinach salad!
Simple yet delicious. It’s a refreshing salad that accompanies most plates well, particularly with barbecue or steak! How we had it for dinner: roast potatoes & steak – so yummy.
