Creamy Avocado Ricotta
I remember when I decided to make this – I had several avocados going off, and the only other thing in the house was ricotta. As luck would have it, it was a match made in kitchen heaven.
I made this for my bestfriend who loved it so much that when I saw her again she asked me to remake it. I had forgotten how good it was until I made it again.
The sauce is just 3-ingredients and so easy anyone can make it. Avocados, ricotta and 1/2 cup milk – voilà!
It’s amazingly creamy, which is why it’s great with pasta but could be used with anything – rice, salad, vegetables, etc. Super easy, super quick & super yummy!

- 2 Avocados
- 1 tub ricotta (about 250g)
- ½ cup milk
- Pepper and salt to taste (I add a lot of pepper usually)
- Place all ingredients into blender, or bowl, and mix together until it is combined and has a silky texture
- Add more milk depending on your thickness preference
- Add salt and pepper to taste (I added a lot of pepper)
