Chocolate & Sugar cookies, not sugar cookies. After an eight month hiatus, I’m back and I’ll keep coming back. So today I’m sharing with you something I whipped up on the weekend.
We’re still in Spring, but it’s definitely been summer here in Zürich for about a month now. I’m still in a love-hate war with summer. On the up side, there’s my birthday, on the flip side there’s the heat, and sun, and all things you should love the summer for – just not me though. During the summer I like to be holed up with a good book, half a watermelon and only come out before 10am or after 5pm. One thing summer hasn’t stopped me from doing though is craving chocolate. How can it be so hot and I’m craving chocolate?
So on Sunday I was really craving something sweet, and I thought what better way to restart my blog than with chocolate? Like most of what I cook, i looked at what I had in my cupboard – not much. I then thought about what I could make- decided on cookies and started putting ingredients together. I knew i didn’t want to use butter, so began my adventure with coconut oil. Turns out this experiment worked!
These chocolate & sugar cookies are the perfect crisp, but chewy, treat I love to snack on. They are good on their own in front of a good show. But the best part? They came out perfect for ice cream sandwiches or just for ice cream full stop. Think thin, but chewy, but crispy, but oh so tasty.

A presto, Ludo
- ½ coconut oil (not melted, soft)
- 1 cup raw sugar
- ½ cup white sugar (optional)
- 1 egg
- 1 spoon vanilla extract
- ½ tsp baking powder
- 1 tsp baking soda
- 1 cup flour (I use half white flour)
- ½ cup cacao powder
- Cream together coconut oil and sugar.
- Add egg and mix until smooth.
- Add vanilla and mix in until smooth.
- Sieve all dry ingredients and mix in well until combined. The dough gets a little tough for a fork/spoon, so it may be easiest at this stage to use your hand.
- Once you have the dough, take spoon sized dough balls, roll and flatten gently with a fork.
- Bake for 10 minutes, leave them to cool at least 1 hour and enjoy!
